They could be used in much of the same way  communicating with customers, along with price point, helps to set expectations for the dining experience. One way the duration strategy is used today is through using seatings, like a pre-theater or tea seating. One way the pricing strategy is used today is through a cover charge (such as at a bar) or a table surcharge (such as a chef's table in the kitchen).

Answer to Question 2

The bottom menu (from 1945) uses the pricing strategy Saturday Night, Minimum Charge in Booth.. This is informing customers that a premium is attached to seating on a busy night.
