Carotenoids are yellow, orange, and red. Lycopene is responsible for the red color in
tomatoes.

Answer to Question 2

Pigments, phenolics, carbohydrates, and others such as organic acids, proteins, amino
acids, lipids, vitamins, and flavor volatiles.
