Answer to Question 1

Fatty acids are chains of 4 to 28 carbon atoms with the carbons in the chain joined by single or double bonds depending on the number of hydrogen atoms attached.
If a fatty acid has all the hydrogens possible attached to the carbons in the chain, it is said to be a saturated fatty acid.
If some of the carbons in the chain are joined by double bonds, thus reducing the number of hydrogen atoms, the fatty acid is called unsaturated.

Answer to Question 2

The number of carbon atoms and saturation influence the melting point of some common fatty acids.
