Polymorphic means many shapes. Solid fats align to form a crystalline matrix. Fat crystals are present in four forms: alpha (a), beta prime ('), intermediate, and beta (). The a crystals are extremely fine and unstable. They form the next larger crystalline form. ' crystals are very fine and stable. These are the desirable crystals for baking purposes. Intermediate crystals give fat a somewhat grainy appearance and are not recommended for use.  crystals are the coarsest form. These are formed when a fat melts and recrystallizes without being stirred.
