The a crystals are extremely fine and unstable. They form the next larger crystalline form. ' crystals are very fine and stable. These are the desirable crystals for baking purposes. Intermediate crystals give fat a somewhat grainy appearance and are not recommended for use.  crystals are the coarsest form.
