When water freezes,
 
  (1) heat is lost, (2) heat is absorbed, (3) heat change is exactly the same as at any other temperature during cooling.

Question 2

Name two factors that produce tender pastry and explain the effect of each.

Oil Coats flour so pastry may be mealy
Warm fat (soft) Spreads better
100 fat More fat

Time elapse Mix and roll and immediately bake
