Since marketing is the formal process of telling and showing potential customers how their needs and wants will be met by a business, managers must ensure their operations' expected quality and service levels are consistent with their marketing efforts. They do so by reviewing guest experiences at all key points of the guests' visit. Managers control these critical service points to identify the need for additional staff training or procedure revisions required to meet their operations' quality service targets.

Operations sell products, but they deliver service. Even if an establishment delivers quality product in an attractive setting at a fair price, poor service quality will result in customers who will not come back or recommend the establishment to others. As a result, a high level of professional service is needed to effectively market all types of restaurant and foodservice operations.
