While product consistency is typically enhanced when using pre-cut beef steaks, seafood, and other meats such as poultry breasts or other chicken parts, some managers may feel the quality of such products is reduced compared to a similar fresh product.
In many cases seafood, pre- cut beef steaks or poultry parts will have been frozen to enhance the product's shelf life. When this is the case, product quality may be reduced if the quality of the specific purchase item purchased is substantially lower than that of an identical fresh product or if customer perceptions are that a frozen product is of lesser quality.
