When anticipating guest needs, what does reading the need mean?

Question 2

Assume that you had been ordering meat products from a specific supplier for a long period of time. Would you still require receiving personnel to weigh every incoming container of meat products? Why or why not?

involves determining the guest's priorities.

Experienced managers know that regardless of the amount of time the supplier has been used, the same basic principles of receiving must still be implemented in every food service operation. These principles include the careful weighing of meat products upon delivery to ensure the operation has received the amount of product they have ordered, and the prices they had intended and to identify any product overages or shortages.
