Answer to Question 1

Masa is a dough made from either masa harina flour or from freshly prepared
hominy. Masa harina flour is ground from dried, nixtamalated (soaked in calcium
hydroxide) corn. The dough is made from the masa harina mixed with water and
sometimes lard. Freshly prepared masa uses hominy but is ground at the moment.
Both are primarily used to make corn tortillas and tamales. There are many other
dishes which use masa as a primary ingredient besides tamales and tortillas. Some
of these are gordita (stuffed), sopes (turnover), chalupa (deep-fried), and
Huaraches (boat-shaped and filled). The many variations of masa is another
indicator of the splendor of Mexican cuisinetaking a very simple ingredient and
creating multitudes of dishes from it.
