Answer to Question 1

Bulgar is a wheat product also known as burghul. It is the primary ingredient in
tabbouleh salad and other Middle Eastern dishes. The wheat berries are steamed and
cracked so that the wheat is basically cooked. To use it it must be reconstituted in warm
water and soaked for 15-20 minutes. Since it is already pre-cooked the dishes that it is
used in are fairly quick cooking. It can be prepared in a similar way to other grains, for
example steamed, simmered, baked, and made as a pilaf.

Answer to Question 2

Answer should include the following: The children's listings should be in keeping with the listings of the chosen menu, appeal to children and have some degree of nutritive value, be lightly seasoned. Finger food works well.
