The best way to retain vitamins and minerals is to cook food for a short time.
Steaming, microwaving, and stir-frying are three good cooking methods to
preserve vitamins and minerals. To prevent leaching of vitamins or minerals,
do not soak vegetables. Instead, rinse them thoroughly and drain.
