One example of Afro-Brazilian fare that reflects the blend of Portuguese and African influences in the cuisine is the famous fritters of the region. The fritters are made from dried shrimp, dried salt cod, yams, black-eyed peas, mashed beans, peanuts, and ripe plantains fried in dend oil. Dried salt cod is a direct Portuguese influence while dend oil is an ingredient that came from the African slaves who were put to work on the sugar plantations.
