The fritters are made from dried shrimp, dried salt cod, yams, black-eyed peas, mashed beans, peanuts, and ripe plantains fried in dend oil. Dried salt cod is a direct Portuguese influence while dend oil is an ingredient that came from the African slaves who were put to work on the sugar plantations.
