One of the concerns regarding olestra is that:
 a. it increases the risk of obesity by providing 9 calories per gram.

If a food is harvested before it is ripe, it is likely to be edible well past most use by or sell by dates. Many consumers may believe that crops lose nutrients as they age. While some may lose some nutrients, they are still very nutritious as long as they are intact.
