Is it acceptable for guests to reuse plates on a buffet?
◦ It is not acceptable due to the food safety concern of cross contamination
◦ The operation cannot keep track of how many times guests return
◦ There is less service for guests, thus servers must be paid minimum, raising labor cost
◦ It is acceptable and saves on labor cost in service and dishwashing
