Both are sources of carbon dioxide gas to leaven a baked product. The biological source is yeast, used for leavening yeast breads, or bacteria and yeast, used for sourdough bread. These are living microorganisms. The chemical source of carbon dioxide comes from a reaction between acidic and alkaline ingredients. The alkali ingredient is usually baking soda, although the acid can vary.
