An informed approach to food additives looks at the benefit-risk ratio. You must weigh the benefit in the food, such as protection from Clostridium botulinum, to the risk, such as causing cancer. You must look at the tests that have been done here and abroad and decide whether the benefit outweighs the risk or vice versa.
