Nitrites are an intentional food additive. The baby food manufacturer put them in the baby food for an intended purpose. They are not accidental or unintentional. Food additives are closely regulated by the Food and Drug Administration which administers the Food Additives Amendment of 1958 . The Food Additives Amendment of 1958 shifted the burden of proof for the safety of food additives from the government to the manufacturer. The manufacturer must not only test the additive for the intended effect, but also for safety, using acute, prolonged, and chronic tests which range from a single dose over seven days to a year's trial over multiple generations. If a food additive is found to cause cancer in man or animals, it is subject to the Delaney Clause and must be removed from the food. An informed approach to food additives looks at the benefit-risk ratio. You must weigh the benefit in the food, such as protection from Clostridium botulinum, to the risk, such as causing cancer. You must look at the tests that have been done here and abroad and decide whether the benefit outweighs the risk or vice versa. Then you can make an informed decision as to whether or not it is wise to use the product.whether the benefit outweighs the risk or vice versa.
