Explain in layman's terms the process of freezing peaches and green beans. This involves discussion of prevention of enzymatic browning, blanching, packaging, rate of freezing, storage time, thawing and cooking procedures.

Answer to Question 1

Peaches contain a polyphenolic compound that undergoes enzymatic browning. For this browning to occur, the substrate, oxygen, and the polyphenolase enzyme are needed. In freezing peaches, the easiest way to prevent this enzymatic browning is to add an antioxidant to the syrup in which the peaches are frozen. It will help to crumple waxed paper on the top of the peaches, to push them down under the syrup and away from air (oxygen).
