Managers must ensure proper table assignment and seating of guests for several important reasons. When table assignments are made properly, the number of occupied seats in an operation can be optimized, service levels are improved because no server station is overloaded, and guest satisfaction is maintained at high levels. When seating guests, managers address who should seat guests, where they are to be seated, and how they are seated. Managers should ensure that any guest requests for specific table or seating assignments are granted whenever it is reasonable to do so. Finally, special care must be given to seating guests with disabilities and those guests arriving with small children to help ensure the safety of these guests as well as that of all other guests in the operation.
