The purpose of this question is twofold. The first is to illustrate to students one type of difficult decision they may be required to make when they manage a food service operation. The second purpose is to allow students to consider where they would go to find specialized information they may need to make good operating decisions.

Sources of such legal advice may include the operation's own attorney, professional trade associations such as the National Restaurant Association (NRA) or, if the operation is part of a chain, human resource professionals employed by the chain.
