Emulsions come when oil and water-based ingredients are bound in a suspension that doesn't readily separate. They can be made with the use of emulsifiers such as egg yolks or mayonnaise. High-speed blenders or blending sticks can mechanically emulsify dressings without thickening agents and provide a very thick product, which will remain suspended for a while, but not as long as when an emulsifier is used.
