A broken mayonnaise emulsion may be re-emulsified by adding the broken emulsion slowly to an egg yolk while beating.

Answer to Question 2

Emulsion stability may be sensitive to temperature fluctuations. A mayonnaise emulsion may break due to over-beating, adding too much oil at one time during its formation, surface drying, freezing, or heating.
