Answer to Question 1

The short soak method for legumes is as follows: sort and rinse the legumes; boil legumes for two minutes; remove legumes from heat; soak in same hot water for one hour; place legumes back on heat and simmer in soaking liquid until tender.

Answer to Question 2

The purpose of soaking dried legumes is to re-hydrate the legumes and break down some of the indigestible carbohydrates.
