Small pieces of raw fish marinated in lime or lemon juice with olive oil and spices that is often served as an appetizer.

Surimi is minced and washed fish mixed with salt and spices. It is then ground into a paste and cooked. The mixture is treated to produce a pure white product with an elastic, chewy texture. Treatment may include salt, sugar, egg whites, starch, and food coloring.
