ANS: It is a plant-based diet with the focus on whole grains, fruits, vegetables, legumes, and nuts. The diet is higher in fat intake with the main source of fat being olive oil with lesser amounts of vegetable oils. It is very low in foods from animal sources such as eggs, meat, and dairy products.

ANS: Trans fatty acids are produced by the hydrogenation of unsaturated fatty acids causing them to become more saturated. Hydrogenation involves heating an oil and exposing it to hydrogen gas to break double bonds and add hydrogen. During the process, the hydrogens cross to opposite sides of the carbon chain, resulting in a trans configuration. Trans fatty acids act more like saturated fatty acids and thus are unhealthy for you.
