 a. exposure to the air will decrease the likelihood of rancidity.
  b. airtight storage destroys the natural antioxidants in the oils.
  c. points of unsaturation in their molecules are vulnerable to oxidation.
  d. this prevents hydrogenation, which makes them less healthful.

Insoluble fiber in fruits and vegetables may decrease the risk of colorectal cancer. Also foods that contain vitamin D and calcium may also lower colorectal cancer. There are studies that suggest that women who consume enough magnesium may reduce their risk of colorectal cancer. Magnesium is found in a lot of fruits and vegetables as well.
