As in, the derivative of a velocity graph is acceleration, so what would the term be for the derivative of an acceleration graph? Is there one?
Eric - I got that, but is there a specific term of it, and could you provide an example of an application?

Let us think about it for a second:
The velocity graph shows a change in distance over time.
The acceleration graph shows a change in velocity over time.
Thus,
A graph showing the derivative of an acceleration graph would show the change in acceleration over time.

This can be used for some practical purposes.
