Directly observing while the person is eating or recording what was eaten by observing a food tray and keeping a food journal or both are important in determining nutritional status and identifying any possible causes for losing weight or having nutritional deficiencies.

You should remember that he has been given a very serious and probably terminal diagnosis, and anger is understandable.
