French fries taste stale when they have been sitting exposed to the air because the oil that the potatoes were fried in undergoes oxidative rancidity. This breakdown of the fatty acids causes the fat to have a bad odor and taste.

Answer to Question 2

The easiest method of preventing Salmonellae infection is to properly cook meat because these organisms are easily killed with heat.
