Answer to Question 1

As food begins to ripen four chemical reactions can occur:

1 . Starch converts to sugar.
2 . Organic acids begin to decrease.
3 . The pH levels of the fruit decrease.
4 . The fruit softens because the pectin in the fruit begins to break down.

The two categories of illnesses caused by foodborne bacteria are food poisoning and food infection.
