1 . Calf rennet extracted from the mucosa of the abomasum of calves
2 . Plant-derived rennet
3 . Recombinant-derived rennet where the bovine chymosin gene is placed into microorganisms

The four usage categories for milk include:

1 . Class I for fluid milk with 2 is the largest market for fluid milk
2 . Class II for soft manufactured items such as yogurt or ice cream
3 . Class III for hard cheese
4 . Class IV for butter and powdered milk
