People had the means to pasteurize milk and make it safe to drink long before
  they began to do it. Why do you think it took so long for people to realize the
  usefulness of pasteurization?

Answer to Question 1

The development of microscopes was needed to observe and document the
existence of microorganisms. Years of research were needed to determine the role of
the microorganism in causing illness



Answer to Question 2

The movement of the organisms in the first sample should be much greater than
those in the heat-treated sample. The organisms and debris are present in the
treated sample, but they are no longer moving.
