What is the cause of temporary afternoon wilting of large-leaved vegetables such as squash and melons?

The leaf area is so large that the roots are unable to take up enough water during the afternoon to compensate for the transpiration water loss occurring through the leaves.

Answer to Question 2

Because their fruits will get dirty and may rot when they touch the ground. Training also maximizes the use of the garden space.
