Answer to Question 1

Aquastat controls are used for hot water oil fired furnaces. They maintain the furnace water at the proper temperature. There is a high limit setting and a low limit setting. The high limit will shut off the burner at a preset temperature.
When the water temperature reaches the low limit, the burner will start up again so that the water temperature does not drop too low.

Answer to Question 2

The disconnect should be sized at 115 of the minimum circuit ampacity 1.15 x 31.5 = 36.225 since disconnect sizes jump from 30 amps to 60 amps, a 60 amp disconnect will be needed.
