Answer to Question 1

Any four of the following:
whole milk
skim milk
low fat milk
buttermilk
acidophilus milk

Answer to Question 2

Low-temperature longer time (LTL) pasteurization heats the milk to at least 145F and holds it at that temperature for at least 30 minutes.
High-temperature short time (HTST) pasteurization heats the milk to at least 161F for at least 15 seconds. The milk is immediately cooled to below 40F.
Ultrapasteurization heats the milk to 280F or higher for 2 seconds followed by a rapid cooling to 45F or lower.
Ultrahigh temperature (UHT) sterilization of milk occurs when it is heated from 280F to 302F for 2 to 6 seconds.

This is partially backed up by the fact that early grandfather clocks displayed IIII for the number 4 instead of IV. Early clockmakers apparently thought that the IIII balanced out the VIII (used for the number 8) on the clock face and that it just looked better.
