freezing in air such as blast freezer
freezing where food packages contact a surface that is cooled by a refrigerant
immersion freezing where intimate contact occurs between the food and the refrigerant

Answer to Question 2

Radiation is the transfer of energy in the form of electromagnetic waves. An example of a radiant heat source is a broiler plate.
