Answer to Question 1

The growth of aerobic bacteria is slowed by removing oxygen.
Providing oxygen limits the growth of anaerobic organisms.

Answer to Question 2

Foods are given a shelf life to determine the time limit on their usefulness, or the point at which they deteriorate to an unacceptable level of quality.
