Based on the label on a bag of white flour, each one-fourth cup of flour contains 23 grams of carbohydrate, 3 grams of protein, and 1 gram of fiber. How much starch and gluten should you be able to extract from the flour in this lab? How does the starch and protein in whole wheat flour compare to white flour?

Answer to Question 1

Food energy is expressed in kilocalories (kcal) and kilojoules (kJ). One kcal equals 4.184 kJ. The data represent physiologically available energy, which is the energy value remaining after digestive and urinary losses are deducted from gross energy.

Answer to Question 2

Assuming 2 cups of flour used which represents 8-one fourth cups:

8 x 23 = 184 grams of starch/carbohydrate
8 x 3 = 24 grams of protein/gluten (This will depend on the flour used.)

Starch and protein content depend on the type of flour. Cake flours are weak or soft and have a low protein content, probably around 8. Bread flours and high-gluten flours are strong and usually have a protein content of 12 to 14. White flour contains the highest amount of starch. Brown flour includes some of the grain's germ and bran, while whole grain flour is made from the entire grain, including the bran, endosperm, and germ.
