  (1) conventional method of mix, (2) hot water method, (3) paste method, (4) stir and roll method, (5) 2 and 4

Question 2

If your pastry recipe called for hydrogenated fat and you wanted to substitute butter, you would use
 
  (1) it is not desirable to substitute butter for hydrogenated fat, (2) less butter, since it is not as plastic as hydrogenated fat, (3) more butter as it is only 80 fat, (4) same amount of butter since fat is fat, (5) none of the above.
