Using pineapple would be the best solution, if it were a juicy pineapple and if the juice were incorporated into the fruit salad. The acid in the pineapple juice would destroy the enzyme, while the sulfur components would work against oxidation. Other fruit juices, such as orange, lemon, grapefruit, etc., would destroy the enzyme. The juice would be poured over the potentially browning fruit, like apples, pears, and bananas, and tossed well to coat.
