Answer to Question 1

Both are forms of pectic substances. Protopectin is found in underripe fruit, is a large molecule, is methylated, and yields firm fruit. Pectin is a gel former, a large molecule, partially methylated, found in ripe fruit.

Answer to Question 2

Room temperature if possible, or if product is served hot or cold, then at serving temperature. All samples at the same temperature.
