Answer to Question 1

All are forms of sensory testing. Descriptive testing is designed to provide information on selected characteristics of food samples. Preference testing determines the acceptability or preference between products. Difference testing is designed to determine whether detectable differences exist between products.

Answer to Question 2

Osmosis occurs in raw fruits as water moves through the semi-permeable membrane toward the higher concentration of solute. Diffusion occurs in cooked fruit as both water and solute move through the membranes which have been broken down through heat.
