Distinguish between hard and soft meringues.

Answer to Question 2

Both are made from egg white foams. Hard meringues are made with 4 T. sugar per egg white. They are baked in a slow oven until thoroughly dry. They still should maintain their white color. Soft meringues have 2 T. sugar per egg white. They are soft and are used as meringues for pie.
