Answer to Question 1

Great Britain is made up of two islands; therefore, fish is plentiful. Meat consumption varies by location, with people in Scotland and Ireland eating more lamb and England eating more beef. The desire to be identified as beef-eaters rather than lamb-eaters has much to do with historic rivalries between the countries.

Answer to Question 2

.true solution of sugar, salts in milk; a colloidal dispersion (sol) of proteins in egg and milk. The fat is emulsified. The entire uncooked custard mixture is a sol.
