Permanent emulsions have an emulsifier that surrounds the dispersed phase and keeps it separate. Ex. Mayonnaise. Temporary emulsions may contain a surface-active agent, but usually do not stay dispersed but separate into two layers. Ex. Oil and vinegar dressing.
