Both are methods of mixing yeast bread. The straight dough consists of mixing all ingredients before fermentation. The sponge dough method has all ingredients mixed except part of the flour and all of the salt. This mixture is allowed to ferment to a sponge; then the rest of the flour and the salt are added and the dough is fermented again.
