Servers must be able to inform guests about the important characteristics of those products. In some cases guests may be allergic to an ingredient and want to ensure they avoid eating it. In other cases, the guest may simply want to know more about an item than they can learn from the item's description on a written menu. To be effective salespersons, professional servers must possess knowledge of food-preparation methods and the ingredients used to make the menu items they sell. When they do, servers can better use effective suggestive selling and upselling techniques.
