Professional servers must possess specific characteristics if they are to deliver high-quality service to guests. In all restaurant and foodservice operations, two factors most impact a server's ability to deliver high-quality customer service: skills and empowerment. Servers must possess the specific skill sets required to do their jobs properly and to do them promptly. In addition, servers must be empowered. An empowered service staff member is one who is encouraged to use his or her own good judgment in meeting the needs of guests. Because guests often have special needs, the ability of servers to make guided, but independent, decisions in meeting guest needs is essential.
